About the Recipe

This easy pasta dough is a family favorite. we make it at least 3 to 4 times a month and on all special occasions. This was my Grandma's recipe and last year I found it while cleaning out my parent's house. I remember sitting in my grandma's apartment as a child watching her make pasta so effortlessly and being in awe of her perfect strands. Grandma made her dough by forming a well of flour and incorporating her eggs one at a time to form the perfect dough, with no fancy equipment just a fork and her hands. Life today doesn't lend itself to making pasta this way. We are constantly being pulled into multiple directions and fires during the day, and we need all the shortcuts possible. I use our stand mixer and pasta attachment to cut down on time but you can easily do it grandma's way. I promise though once you start making your own fresh pasta you won't want to go back to the store varieties.

Ingredients

  • 7oz white all-purpose flour

  • 7oz semolina flour

  • 4 eggs

  • salt

  • optional: pepper and fresh herbs


Preparation





Step 1


Mix all ingredients in a stand mixer with the paddle attachment until the dough comes together


Step 2


Once the dough comes together switch to the dough hook and use it until the dough cleans the sides of the bowl


Step 3


Knead on a lightly floured surface for 2 mins until smooth, wrap in plastic wrap for 2 hrs to let the dough rest


Step 4


Dust 2 large baking sheets with flour and set aside.


Step 5


Slice the dough into four pieces. Gently flatten one into an oval disk. Run the dough through the pasta roller attachment two times on level 1 (the widest setting). Then fold the dough in on itself making a rectangle. Run the dough through the remaining pasta levels one at a time to make the dough thin. Be sure to use flour so the dough doesn't stick.


Step 6


Run the pasta sheets through the pasta cutter attachment be sure your dough and cutter attachment are well-floured. Repeat with the remaining dough. Cook the pasta in a pot of salted boiling water for 1 to 2 minutes
